7/1/2011: Healthy Summer Recipe

Try this healthy summer recipe recommended by the IHTC dietitian! Green beans are low in calories and full of nutrients —vitamin K, vitamin C, manganese, vitamin A, fiber, potassium, folate, and iron. Olive oil is high in monounsaturated fatty acids, and antioxidants such as phenols and tocopherals, as well as vitamin E. So fire up the grill and enjoy this with your family or friends!

Oven Roasted (or Grilled) Vegetables
1 pound fresh green beans (or asparagus)
2 TBS olive oil
3 cloves minced garlic

  1. Place all in a ziplock bag and marinate for 1 – 2 hours
  2. Place on a large baking sheet and bake at 450° for 15 – 18 minutes (or until crunchy soft texture)
  3. Stir vegetables midway through baking time.

(You may also prepare these on a grill. Cooking time will depend on the heat of your grill.)
